{"id":571,"date":"2024-12-22T18:34:48","date_gmt":"2024-12-22T18:34:48","guid":{"rendered":"https:\/\/kvarner.wine\/wp\/?post_type=vinarija&#038;p=571"},"modified":"2025-01-08T13:17:11","modified_gmt":"2025-01-08T13:17:11","slug":"plovanic-vina","status":"publish","type":"vinarija","link":"https:\/\/kvarner.wine\/en\/vinarija\/plovanic-vina\/","title":{"rendered":"Plovani\u0107 vina"},"content":{"rendered":"\n<p data-block-type=\"core\">Kada neka obitelj tradiciju proizvodnje vina broji u stolje\u0107ima, kao \u0161to je to slu\u010daj s obitelji Rube\u0161a iz Kastva, onda uspjeh njihovih vina i OPG-a Plovani\u0107 i ne treba pretjerano \u010duditi.<br>Iako nisu jedini \u010dija je obiteljska tradicija vinarstva tako duga, svakako su rijetki u koli\u010dini entuzijazma i truda ulo\u017eenog da se iz autohtonih sorti kastavskog kraja stvaraju vina koja \u0107e se svojom kvalitetom nametnuti pomalo uspavanom tr\u017ei\u0161tu na kojem dominiraju poznatije kvarnerske sorte i vina.<\/p>\n\n\n\n<p data-block-type=\"core\">O uspjehu njihova rada govori i \u010dinjenica da je njihova kupa\u017ea kastavska belica, tek druga u \u017eupaniji, 2019. godine dobila ocjenu vrhunskog vina, a sam OPG Plovani\u0107 registriran je 2011. godine.<\/p>\n\n\n\n<p data-block-type=\"core\">Pored belice, malvazije i crne kupa\u017ee Nera, OPG Plovani\u0107 vina proizvodi i prvi, jedinstveni pjenu\u0161ac Plovani\u0107 sa\u010dinjen od autohtonih sorti verdi\u0107, jarbola i divjaka.<br>Posebnost vinarije je i vino iz gruzijskih amfora &#8211; Amfora 246, macerirano 8 mjeseci i potom odle\u017eano najmanje 12 mjeseci u velikom drvu. Prema dostupnim informacijama mi smo \u010detvrta generacija proizvo\u0111a\u010da vina u obitelji, iako smo poprili\u010dno sigurni da ih je bilo i ranije, jer je obitelj po proizvodnji vina oduvijek poznata u Kastvu i \u0161iroj okolici. Takva obiteljska povijest zasigurno nam je bila odli\u010dan vjetar u le\u0111a u nastojanju da pri\u010du o kastavskoj belici ponovno o\u017eivimo i podignemo na neke nove, vi\u0161e razine. U posljednjih 20 godina belica svojom kvalitetom ulazi u sam vrh vina Primorsko-goranske \u017eupanije na \u0161to smo iznimno ponosni. Vjerujemo da \u0107e pri\u010da o belici i u budu\u0107nosti rasti te i drugima biti primjer do kuda se\u017ee entuzijazam, vjera i upornost jedne obitelji.<\/p>\n\n\n\n<p data-block-type=\"core\"><strong>2. Pribli\u017eite nam svoju ideju da belicu predate na istra\u017eivanje Agronomskom fakultetu, a rezultat \u010dega je prvo postavljanje parametara kupa\u017ee.<\/strong><\/p>\n\n\n\n<p data-block-type=\"core\">Godine 2009. u Kastav dolazi prof. Edi Maleti\u0107 s Agronomskog fakulteta u Zagrebu koji je iznimno zaslu\u017ean za pronalazak i o\u010duvanje mnogih autohtonih hrvatskih vinskih sorti. Nakon upoznavanja s na\u0161om belicom potvrdio nam je da imamo predivnu vinsku pri\u010du jer takva kupa\u017ea u jednoj \u010da\u0161i ne postoji nigdje na svijetu, a ako je neka od sorti jo\u0161 i autohtona onda je na\u0161a pri\u010da zlatna. Taj nam je susret dao novi poticaj u nastojanju da do\u0111emo do svog vinograda.<\/p>\n\n\n\n<p data-block-type=\"core\">Odlu\u010dili smo zasaditi prvi kontrolirani nasad belice tako da odvojimo i grupiramo njezine sastavnice (stari vinogradi belice su unikati svaki za sebe jer niti jedan nema zasa\u0111en isti omjer njezinih sastavnica).<\/p>\n\n\n\n<p data-block-type=\"core\">Danas se u na\u0161em obiteljskom vinogradu nalaze fizi\u010dki odvojene divjaka, mejsko belo, verdi\u0107, jarbola, malvazija i brajkovac. Interesantno je da smo kod pronalaska reznica za sadni materijal ustanovili kako je na 10-ak km2 prona\u0111eno samo 10 loza za koje smo bili sigurni da je divjaka. Dakle divjaka je bila gotovo nestala! Usporedbe radi \u2013 danas u na\u0161em obiteljskom vinogradu imamo zasa\u0111eno preko 700 loza divjake sveukupno, na \u0161to smo izuzetno ponosni.<\/p>\n\n\n\n<p data-block-type=\"core\">U godinama od 2010. do danas sadimo na\u0161 vinograd &#8211; bilo je tu ushi\u0107enja i razo\u010daranja, kao i u svakom novom poslu, ali nismo posustajali. Danas imamo zasa\u0111eno preko 4000 loza sastavnica belice. To je za na\u0161e prilike ve\u0107 respektabilna koli\u010dina kad se zna da zbog konfiguracije terena za obradu na\u0161ih vinograda ne mo\u017eete koristiti ve\u0107u mehanizaciju. Dakle, ve\u0107inom je sve ru\u010dni rad.<\/p>\n\n\n\n<p data-block-type=\"core\"><strong>3. Kako ste do\u0161li na ideju proizvodnje pjenu\u0161ca od kupa\u017ee belica?<\/strong><\/p>\n\n\n\n<p data-block-type=\"core\">Agronomski fakultet iz Zagreba 2016. godine provodi projekt \u201eGospodarska evaluacija autohtonih vinskih sorti Kastav\u0161tine\u201c tijekom kojeg je utvr\u0111eno da tri sastavnice belice imaju izuzetan potencijal za proizvodnju pjenu\u0161ca. Na prijedlog i inicijativu, ponovno, prof. Edija Maleti\u0107a, 2018. godine nastaje prvi pjenu\u0161ac od kupa\u017ee belica u koji u razli\u010ditim omjerima ulaze verdi\u0107, jarbola i divjaka, a koji se dobiva tradicionalnom metodom vrenja u boci. Tim potezom dokazali smo sami sebi da smo spremni krenuti u neke nove avanture i podi\u0107i proizvodnju na vi\u0161u razinu.<\/p>\n\n\n\n<p data-block-type=\"core\"><strong>4. Belica \u201eMI2\u201c, Vi i Kukurin ste za\u010detnici slow fooda u Hrvatskoj. O \u010demu se radi?<\/strong><\/p>\n\n\n\n<p data-block-type=\"core\">Belica MI2 povratak je korijenima i iskonskom na\u010dinu proizvodnje vina belica. To je belica proizvedena dugom maceracijom, fermentacijom na vlastitim kvascima bez kori\u0161tenja enolo\u0161kih preparata, a ideja za ovo vino dolazi od Nenada Kukurina, poznatog pobornika vina s dugim maceracijama i na\u0161e vinarije. Na ovom tipu vina eksperimentiramo ve\u0107 tre\u0107u berbu za redom i ponosni smo na \u010dinjenicu da \u0107e belica iz berbe 2022. imati svoju premijeru ove godine.<\/p>\n\n\n\n<p data-block-type=\"core\"><strong>5. \u010cemu slu\u017ei gruzijska amfora u Kastvu i za\u0161to je vino u njoj 246 dana?<\/strong><\/p>\n\n\n\n<p data-block-type=\"core\">Gruzijska amfora u Kastvu rezultat je ideje Nenada Kukurina i entuzijazma nekolicine prijatelja spremnih podr\u017eati na\u0161u vinariju u pri\u010di o prvom vinu iz gruzijske amfore u Kastvu. Amfora je iz Gruzije uvezena 2014. godine kao prva takva u Primorsko-goranskoj \u017eupaniji, a ve\u0107 2015. godine ku\u0161ali smo prvi sivi pinot iz amfore. Prva maceracija trajala je to\u010dno 6 mjeseci, a nakon par godina odva\u017eili smo se na maceriranje u trajanju od 246 dana od kuda dolazi i ideja za ime samog vina.<\/p>\n\n\n\n<p data-block-type=\"core\"><strong>6. Na nosu je kompleksno, intenzivnih mirisa korice kruha, tosta te mineralnih nota mokrog kamena i mediteranskog bilja popra\u0107enih vo\u0107nim aromama zrelije jabuke i kru\u0161ke. Na nepcu je mekano, elegantnog tijela, finog i kremastog perla\u017ea. U retru dolazi do izra\u017eaja nota pe\u010denih lje\u0161njaka i \u017eutog cvije\u0107a.<br>Uz jelo: Po\u017eeljno ga je servirati kao aperitiv ili uz laganija predjela i jela. Sjajno se sla\u017ee uz razne sushi specijalitete. Carpaccio od bijele ribe s emulzijom od agruma i maslinovog ulja. Svje\u017ee jagode.<br>Potencijal odle\u017eavanja: \u010cuvati ih obavezno polegnute u tamnom na stabilnoj i niskoj temperaturi.
